It's early, I don't know anything objectively cool, so... a chemistry one - if you cook red cabbage and take some of it's water ( it should have a deep red-ish colour) and if you dilute it with some water then throw in small pieces of soap, it will turn green. Red cabbage has a natural indicator in it, which is red-purple in the plant, but if you make the solution alkalic (hence the soap) it will turn green.

You can splice an ac wire chopped from an old tape player to the ends to two forks and insert each fork into different ends of a dill pickle. When you plug the wire into an outlet the pickle will light up like a light bulb, but only at one end. It will smoke and smell really bad too. But, it won't be consumed by the fire. Really cool experiment, but I don't recommend holding the two forks in your hands while you try that. I mount them on a wooden frame.
