M is for mature, aka 17+. for sex stuff this will basically only get references and maybe some partial nudity.
uncensored edition would be AO which is 18+(and basically will never see store shelves if there is a physical version)

I thought that M was from "Mild Nudity" that is in the description of the game, at the end...
also someone commented that in Germany there are laws against porn, basically, and that could be the reason that there are 2 versions on steam, don't know either if it's available in Germany Store the AO version
