...in all seriousness, make sugar cookies, but in half, put red food coloring; in the other half, green. Add mint extract to both halves. When putting them on the sheet, push your thumb into the center, and stick an Andes mint in it. Now, the food coloring part is optional, but you said Christmas (eve), so green and red make them festive.
