Carcassonne! Because depending on the other players it can be a nice co-op game or a fierce battle of locking up everyone elses expansions.

Diplomacy. Because no matter where you are in the game or whether you're winning or losing, there's SOMETHING unique and interesting to do.
Also, it ruins relationships better than almost anything else.

Advanced Squad Leader.
Plays best with 2, but covers solitaire well, and has some good 3-player scenarios.
Pretty much covers all possible squad-level combat of WWII, from small skirmishes to huge grind-fests (like Stalingrad)

Eclipse is a good board game, takes a long time to play though. Ticket to Ride is also really fun.
