I can't see any Definitive Edition on steam.
Maybe you mean Final Cut? If so, than that's a different game.

No. FC includes butchered story of all 3 games squeezed into one and slightly different gameplay.

The first two games were released with a certain set classes (with the second game essentially adding two classes to the single class available in the first game), while the third game was released with an entirely different set of classes.
The Final Cut is the gameplay content of all three games put into one game, utilizing the progression framework and classes of the third game. You can get a free copy of Final Cut (assuming that didn't end) by owning all three original games, but you can't get any of the component games by owning Final Cut.

Van Helsing III is basically a complete waste, since it lacks the rebalancing of Final Cut and doesn't modify the gameplay any. It's really just there for people who already played the first two games (which still have merit, due to having different classes from Final Cut) and don't want to repeat playing through the early content.

I guess the only reason to even play any of the individual ones if you have Final Cut is for cards.
