Can someone tell me how does that work? If I get this, does the SE gets replaced permanently with this DLC or can I simply switch back to SE edition by turning off this DLC, or is it shows as DLC but a new "game" pops up in my library, that being Anniversary edition?

As I understand, the Creation Club mods that got added by the paid Anniversary DLC aren't a "standard" type of mod (.esp / .esm) that you can disable in the Skyrim launch menu, but a special type (.esl) that, if you don't want it, you have to physically delete it from your Skyrim install folder.
I know that this happened with the Creation Club mods that were added by the free Anniversary update, but if I am wrong, feel free to correct me!
So, to fully answer your question, it should install as a DLC on Steam, but there is no easy way of removing the update contents themselves.
Also, if you haven't updated yet, and want to play SE with mods that rely on the Skyrim Script Extender (specifically the PapyrusUtil plugin for the Script Extender), do not update it, because it will break a ton of mods!

I hope I win this, I would like to try out some of the Creation Club mods but really don't feel like giving BethSoft 19 Euros for a bunch of DLC that's meh and only like a couple that are actually good.
