The Old Kingdom series (by Garth Nix) is an absolute favourite, though it's YA so YMMV.
Malazan Book of the Fallen (by Steven Erikson) is a more recent read, some people call it the Dark Souls of fantasy books and I would agree with that sentiment, so.. good luck if you decide to go through it!
