Some less known but quality bands - depending on your tastes ofc : Overkill (power/thrash, expecially their 80s/90s stuff), My Dying Bride (doom/gothic of astounding quality), Cancer (obscure but excellent english death metal band from the early '90s), Anathema (starting from heaviest doom evolving into alternative rock, except for the first couple of albums it's all top notch quality) , Nevermore (mostly thrash, Warrel Dane's singing is superb). Just a few random names from over 20 years of listening to metal :).
