You should maybe try Zoo Tycoon 2 (didn't try the Xbox new game so I won't recommend it yet).
Not really a shooter but I had a good time playing Safari Photo Africa: Wild Earth - walking here and there and trying to take good pics of animals in certain situations for the articles.
