Saying thanks is cool and all, but you know what's really cool? Sharing sandwich recipes.

Egg salad:
8 hard-boiled eggs
2 Tbsp celery, finely chopped (optional)
3 Tbsp red onion, finely chopped (optional)
3 Tbsp dill, chopped
3 Tbsp chives, chopped

For the Dressing:
74.67 g mayonnaise
2 tsp lemon juice
2 tsp Dijon mustard
0.5 tsp paprika
0.5 tsp salt
0.25 tsp ground pepper
1 garlic clove, minced (optional)

Instructions:

  1. Cook eggs and cool. Once cooled, peel and chop eggs and place into a bowl.
  2. Add finely chopped celery, red onion, dill and chives.
  3. In a separate bowl, combine ingredients for the dressing. Gently stir dressing into the egg salad until coated and serve on bread/toast or lettuce wraps.

If you prefer less yolk like I do, remove 3 yolks from the eggs before chopping the eggs up.

The Wendigo:

  • Bacon (crispy of course)
  • Peanut Butter (crunchy or smooth is up to you)
  • Mayo (or aioli if you're fancy)
  • Pickle (you can use sweet or sour, it's no big dill)
  • All on your choice of bread, preferably toasted (Sourdough comes recommended, but I prefer a green chile-cheddar bagel for the New Mexico variant)

To anyone reading this who can't imagine these flavors working together, I can personally vouch that this sandwich is legit!

My own personal spin is to replace the pickles with spicy kimchi when I'm in the mood for some heat.

Breakfast Quesadillas! (close enough to a sandwich right?)

Ingredients:
6 eggs, 1/4 cup milk, (any kind), Salt and pepper, 1/2 green pepper (diced), 4 tablespoons unsalted butter, 6 slices bacon (cooked, roughly chopped), 1/4 cup shredded cheddar cheese, 6 medium soft tortilla shells

Instructions:

  1. In a medium bowl, whisk eggs, milk, salt and pepper. Add green peppers and stir to combine. Set aside.
  2. In a large skillet, melt 2 tablespoons butter over medium heat. Add egg mixture and cook until no longer runny, stirring often. Remove eggs to separate plate.
  3. In the same skillet (wipe, if needed), melt 2 tablespoons butter over medium heat. Place one tortilla shell in middle of pan.
  4. Top with 1/4 cup cheese, leaving a 1/2 inch border around tortilla. Spread eggs in an even layer on top of cheese, followed by bacon and a sprinkling of more cheese, if desired.
  5. Place second tortilla shell on top of egg mixture and lightly press down. Heat for 2-3 minutes on both sides, or until shell is slightly golden and cheese is melted. Repeat with remaining tortilla shells.
  6. Serve immediately.
