If you do start watching start with the 1996 TV movie, it's a quick refresh over the previous 33 years of its existence and has Paul McGann in it. Then move onto the 2005 episode Rose which is where Nu-Who starts. The pace of the series from there forwards is more in line with what modern audiences expect.

After that, well, all I can say is "Enjoy!" (And don't!) as you clamber through an exciting world of stories both fantastic and occasionally really cringey. It's all part of the mix. You might even want to check out the slower paced longer Old-Who serials and see how much of an impact that has had on modern culture.
