you can add winner on the steam or send key/giftlink by eamil - after ending you will see the necessary data
New version of the Steamgifts give us possibility to sending keys/giftlink directly via Steamgifts - when you create giveaway you may choose "key" (point 2) and then you will see "key list" (point 3). then note that:
Keys should be separated by new lines. Please enter Steam redeemable keys, or gift URLs from Steam or Humble Bundle. Key giveaways for 50 copies or greater will be automatically distributed to the winners, while giveaways with less than 50 keys will allow you to review the winners before the keys are sent.

you can try to test this without ending whole thing for real ("Review Giveaway").
