I've actually been experimenting with this recently.
I eat alot of meals alone, and it's hard to cook a single portion, so most of the time i make exactly 2x as much as needed.
So now instead of warming up the second half, i just try it out cold, and see how ot changes the flavor for better or worse.
...mostly it's worse, as it seems many things hit the taste buds better when at least at body temp...

Yeah, there are things like that and soup that taste better after being left to simmer, or after reheating.
But when eaten cold, the only thing that stands out as decent is pizza and pasta with marinara. Most any other cold leftover tastes better re-heated.
..better to pan fry with a bit of oil or veg stock, than nuke in most cases as well...

Leftovers make great lunches to bring to work. I'm not going to cook in the office, microwave meals aren't great for you and are pretty expensive, and buying lunch every day in the office cafeteria or a nearby restaurant is far MORE expensive. So I definitely appreciate leftovers, even if they're not among those that are better on the 2nd day (and some definitely are!)

Honestly, sometimes leftover pizza is better than fresh. Something about cold pizza and even air-fried left over pizza can really hit the spot.

Just like you mentioned in a comment above, I've noticed that I usually am more satisfied when I eat a meal I ate as a leftover. Leftover pasta in general can be great.
Weirdest one for me is Chicken Quesadilla. I make it all warm and crunchy and that's great, but I had it leftover once, all sgggy and room temp, and it actually tasted amazing. I felt I could taste the various flavors better (avacado, chicken, sauce), and especially the cheese, both in flavor and texture was better to me. I add some corn chips to recover some crunch.

Oh dear, your post made me realise I've missed out on that bundle as well. Thought I didn't see a due date for it so was complacently waiting for the new month to come around and buy it.
Digressing a little from the original question, I personally don't even like to see leftovers on my plate/bowl. I scrape whatever little bits of edible food pieces still on the plate with as much grace as I can muster if in public and chomp them down all the same (e.g. one grain of rice, one 1mm piece of noodle, some perfectly edible pastry crusts). People might think that my last couple of mouthfuls are of invisible food. Luckily, I haven't resorted to licking the plates (yet).
That said, if there were leftovers, unless I don't quite like those food in the first place, I heartily welcome them as my next meal. Less of "like", and more of feeling "obligated" to finish the food.

I do not.
But I should learn to embrace it. It will save a lot of energy and time. I usually cook food in smaller quantities, this ensures better control over the recipe and peak taste. Had I made food in larger quantities, I would be sorted for a day or 2. Another nice factor would be having multiple leftover at once, means more variety!
Ideally I would love to be one of those people who do Meal Prep (See this subreddit ). But unfortunately Im too lazy to do so, I do get annoyed by monotony.
Also no, I never dump leftovers if I have any, but I would if its past its due date.π

I always do. It's not something new for us. We cook for 2-3 days often, and I've grown up this way. Since most of the dishes we cook for multiple days are stew-like and soup-like, they do taste even better the next day.

One of the only foods you really can't do as leftovers is mac and cheese. Unless you have like, more liquid cheese to zhuzh it up with.

One of my most vivid children memories is eating roast chicken on sunday, and then using the leftovers and gravy in at least 3 different meals afterwards.

Frech fries (chips) is a no-go for reheating in a microwave, unless if it's fish & chips chips, and it's only like an hour old, then it's fine haha
And Pizza, you CAN reheat it in a microwave, but be sure to periodically move the slices around, or get one of those plates made specifically to reheat bread/pizza, so that they don't sweat and get soggy.
