Very difficult to choose a preferred Italian cheese.
My contenders are (in any order): mozzarella di bufala, scamorza affumicata, cacio cavallo, pecorino romano, parmigiano reggiano, grana padano, stracchino, gorgonzola, treccia affumicata, asiago.
Absolutely any of them is an absolute temptation for me.

Sooooo big made food stuff is disgusting and normaly much more spread in the USA.

andreadandrea posted a lot of good italian cheese that i know and to pick my absolute favorite from them is very hard but i would pick the grana padano.
He lift normal spaghettis with tomato sauce into something one level higher.

I am 1/8 italian but never learned the language from my italian family tree -don't know one of them but they life at the lago majore and are "known" (and have the name "Pavesi" -don't question me if it is written correctly-)-, but i can count from 1 to 10, say a lot of bad words and a few nice ones and understand sometimes the general direction of a talk/sentence. I learned all that only from a few talks a bit of hear what they say and find out what they mean and a bit from italian, portuguese and spanish sentences that i heared in a few movies.
But to be honest i don't like italian because it sounds sooo stressfull for me because the talks are mostly very fast
My mother is 1/4 italian and are 100% the italian woman type that each one have in front of their inner eye when thinking at italian women. If you make her aggressive she will throw stuff at you, use really bad words, speak with her hand in combination with the voice and all such stuff :-D (all women in my family are that italian style of women -from the look too-)
