Definitive Experience (doesn't this include a copy of the two above as well?)

No, you only get a gift-able copy of The Phantom Pain (Base copy, no DLC) added to your inventory if you put in the code for the definitive experience last

The DLC is a separate key so you could definitely give away the other two keys humble gives you, I'm not going to say with 100% certainty the gift copy will show up in your Steam inventory under those circumstances but I don't see any reason why it wouldn't, and as long as it does you could definitely give that away too.
