Honestly, I didn't find it particularly enjoyable, but can't really point out the reason why. Not saying it's bad, but it's not Skyrim awesome either (and definitely not for 60, especially considering that you'll pretty much pay for everything new and/or extra). For the record, I only played single player, not PvP, so can't comment on that... I guess it gets more fun, when questing with others.

Skyrim is great on its own, but particularly awesome when modded. Don't expect much modding on ESO (there are some useful add-ons, but mostly UI stuff).

If you decide to go ahead, keep in mind that you need very good hardware (otherwise you'll face HUGE loading times, that is if you can even run the game with decent graphics), and lots of HD space (expect huge updates).

All in all, if you get it, get it on a good sale. And never less than the Gold Edition (base game misses out on a lot of stuff that should be default).

You want gold, not the base thing unless you don't mind a monthly subscription.

It is basically just quests and grinding, and if you rather solo, from what i played seems you just really others for certain quests.

Not needed to play, but with you have access to the dlc that is in gold, you get a bit more exp/gold and an unlimited item bag and you get crowns you can spend to buy items.
I only played it with 14 free subscription days, so can't really say the difference in that without.
