If they don't take it, it stays in your inventory, as far as I know.

Meanwhile, gift will stay in your inventory and also you can null the gift code returning it to your inventory (gift code is a alphanumeric string in the email packed together with the claim url that points to the gift; if you return it to your inventory, even a legit steam gift email will not give the present to receipt)
