If you have any interest in math(s), then Numberphile is the way to go. They have some crazy, interesting, hilarious, etc videos. Sometimes all at the same time!

I'm not a big fan of Youtubers in general, but there are a handful of channels that I like to watch/listen to:

• Lazy Masquerade - scary stories and urban legends from all around the world. This guy's the best horror narrator in my opinion.
• Rob Gavagan (previously Rob Dyke) - another channel focusing on the strange, the dark and the paranormal. I like his "Seriously Strange" and "Twisted Tens" series.
• YongYea - gaming news, reviews and discussions
• Laymen Gaming - gaming news and discussions
• Jim Sterling - gaming news and impressions

ScreenJunkies... I have been watching "Movie Fights" for a couple of years now.

J. Kenji López-Alt - food and cooking channel
Easy Allies - old people from Gametrailers under a new name
Watch it Played - I play a lot of board games that are really complex and I like this host and he does a good job of explaining games
Wreckless Eating - guys (and sometimes women) do a bunch of stupid eating or drinking challenges

Billiam - he generally makes an overview opinion video with series/animes.
JonTronShow - Jontron !!!! Hilarious and fun content :)
LGR - looks at/uses and sort of reviews older computer technology and games
MxR Mods - lists some of the best fallout and skyrim mods
MxR Plays - these days it's more a reaction channel with his girlfriend but still very fun to watch

Well my favourite channel just get removed I saw it for now searching it. It was called Jeff Quitney and it had old documentaries on it, Big Picture and ww2 stuff mostly, updated daily with new stuff. That sucks.

You Suck At Coking: really funny cooking channel, this guy is good at making creative scripts and music.

RTGame: this guy play games by creating the worst chaos, very funny with lots of game variation.

Sadly the rest of the channels I'm subscribed to almost never post new videos (like Felix Congrave, love basically everything he makes).

Don't watch a lot of Youtube channels but I do very much enjoy Hat Films. I'd recommend them if you're into gaming stuff and top banter.

For funny game skits (check out their Epic NPC Man series), Viva La Dirt League

If you like Blizzard games and funny animations, you might like Carbot Animations - They've rather recently added a new series ("DiabLoLs" which is obviously related to Blizz's Diablo franchise) and if you've played the game before, you should be able to get many of the jokes :)

If you like Black Mirror-style Sci-Fi short films, I'd highly recommend DUST - They've got some thought-provoking stuff

I watch A LOT of Youtube..
the main problem is that 66 over 66 of the channels I'm subscribed to (yeah, many of them are inactive by the way xD) are all 100% in Italian, even the scientific ones, and I'm not subscribed to any kind of musical channel or whatever else..
but I really watch a lot of things on youtube =P
although I feel like I don't know a single channel of all those you all mentioned ahah
