Beans Burritos or Bilbo Baggins?
Been a very long time since I used FL Studio, but there's probably a setting somewhere for the piano roll numbering as different MIDI specs differ on what they consider the numbering to be.
On a cursory search, have you tried right-clicking the root note for middle C yet?

Quick Fl studio question:
I have a plugin that uses notes in the -1 octave for key-switches so c-1 d-1 etc.
I cannot enter those on the piano-roll because the lowest note enter-able is c0.
Google doesn't provide answers. Anyone know a trick to input c-1 to b-1 notes?
