I though by keys it was keys for games, this whole thing is confusing me D:

Steam Inventory items like Team Fortress 2 Crate Keys and Counter Strike: Global Offensive Crate Keys are items that can be sold on the Steam Market for Steam Wallet funds, which is then used to purchase more games for trading.

If there wouldn't be, people would not trade.

Think of crates as currency. Sacks of gems on Steam are also used for this purpose. And currency there could be used to buy any good Steam offers.
Cards can serve this purpose too, but since most of them are a lot cheaper and can lose their value quickly if a game goes on a sale big enough to induce card farmers to buy many of them, they are rarely used as currency, unless people really collect them.

sometimes you will find cheaper deals with traders than buying directly from steam.
and it's also safer to trade keys or gems than paypal.

Keys make for a convenient currency, as they remain relatively constant in value. Keys work like any other currency (why exactly is "money" used in the real world? Similar reason for why keys are used for trading on steam).
