There are a few steps, I will need to guide you through, but I guess it's all manageable.

To get it, name advises for a holiday in France. I like being outside and go mountainbiking. Maybe at a lake? Don't name big cities. I can search them myself. It's more about something not obvious. For example: I was here this summer.

Mont Blanc? Just because I'm Canadian and we have a Mont Trem Blanc here. And I like snowboarding but I'm sure you prob don't like popular tourist areas seeing as you linked a nice hiking area. Anyways thanks for the offer and have a great day sir.

Since I am from Spain I would have to recommend the Pyrenees, you can bike on the France side if u want :D
Otherwise, a place in France to mountainbike that you have surely not consider would be Corsica ;)
Beautiful nature with coast but also mountains. The highest peak in the island is 2700 m.

hard to say.. but on the french side you could try Val d'Azun or Vallee de Cauterets. Pont d'Espagne is beautiful.

Hm,last year we too were in doubt! That's why we decided to visit Strasbourg! Strasbourg – a mix of French and German Cultures! Straz is also filled with great restaurants and brasseries. Trust me it's a great place! Just be careful not to get fat! Food is number 1!

Dordogne – Castles, Caves and Adventure Parks (great!),
Montpellier – Student City with Stunning Center Square,
Les Arcs – Snowy Mountain Adventures (only winter period),

Visited Strasbourg a lot now (my wifes sister lived there ;) )
Visited Paris in AC: Unity ;) ...this doesn't look like an insider tip ;)
Went to Bordeaux in summer of 2018 ;)

I know of someone who took an REI trip to climb Mont Blanc and then into a glacier (rappelling down and pick & hammer up), said it was loads of fun.
Roaming one of the old castles/chateaus.
PS I have this game already, so I'm not entering, just suggesting.

It's not a place, it's a quite big area : "Le plateau des Mille Étangs" (1000 ponds plateau) in Haute-Saône. Beautiful, peaceful, quiet, fresh air. You can definitely walk and ride all day.
And since it's in the North-East, it comes with a megaton of good meals

hmm swear I posted yst but guess i didnt press button. I suggested Mont Blanc, because I'm canadian and we have a Mont Trem Blanc here. But seeing as you posted a nice serene hiking place you probably don't like the popular tourist areas.

I've spent 8 summers traveling Europe by bicycle. One of routes was Basel-Barcelona-Mulhouse (1872 km). I was using mountain bike with road tyres. Obviously, I wasn't riding off road, but on regular asphalt roads, but they were very rural and desolate. Almost no cars, very relaxing (although kinda mountainous). Anyway, if you are not into regular roads, maybe you can also find off road stuff in these areas. I'll throw you the names of really cool picturesque (relatively) unknown towns:

  • Pont en Royans and gorgeous Gorges of Bourne river
  • Prats-de-Mollo-la-Preste near Spanish border
  • Le Caylar - Le Cantobre (look at this view)
  • Cevennes National Park (and towns of Meyrueis and Sainte Enimie)
  • Le Puy En Velay and area
