TL;DR at bottom.
Hello, fellow gaming friends I am Jerp and I come to you today in the hopes of finding a new game with the advice and suggestions of all of you.

Here's the situation!: I have a bunch of friends who all irregularly meet on a VOIP program and we play game together (Right now it's mostly Rocket League and it's AWESOME).

The thing is, however, is that we all have varying schedules and responsibilities that we it's uncommon that we're all on to play a game.
So, what I'm looking for is a game we can all play together, with the ability to do your own thing, or have people drop in and out and tag along with you.

We recently played the heck out of Terraria. It was perfect; we were able to keep a server running, people could do their own thing, grind, build, explore, kill, and when others came together we'd do other things like bosses or group projects. The game offered a kind of flexible gameplay and a whole lot of content that allowed everyone to enjoy (some people preferred just building things over going into boss fights , one guy just liked to explore, and another guy just... well, he dug holes.

Anyway, long-winded blah blah blah...

We contemplated things like Space Engineers but that is too heavily focused on building and there's no real exploration and combat is lacking as well.

We also looked at Wurm Unlimited, but that seemed too slow (Like a background game you're not really playing).

TL;DR
I want to find another game like this. Not specifically LIKE Terraria, but offers the same features:
1) Accessible to Everyone
2) Variety of things to do (build, explore, fight, level up, whatevs)
3) Freedom to go about your own or with friends
4) Drop in and out
5) Probably requires a permanent server so people can hop in and out regularly
6) Can support lots of players (at least 8 if not more)

So, if you have suggestions I'd love to hear them!

Maybe you could play Don't Starve Together. But i am not sure if the servers always up though. Haven't played it for a while.

Yeah it has. Like i said i haven't played it a while back then you could play up to 6-8 people.

I couldn't answer the specifics of if it'd work for your group, but speaking from a 'played it in 2-player co-op' perspective, it's definitely a fun game that can last a good while on a static server [longer than Terraria, even, though I think it's been years since I played it, so it may have changed to offer longer-lasting content, since].

I enjoyed it far, far, far more than Terrarria- which really just means, it's a similar concept, but a very different style of actual play [feeling more involved and more of a steady progression forward (for the team), than Terraria, which was more freeform].

So no telling if it'd suit your group, but it has a suitable structure for what you want [if, in fact, it can handle more than 2 players].

tl;dr I recommend DST as a game :)

When I read LIKE Terraria, Fight The Dragon jumped off my mind, but I can't really tell if it is what you're looking for because I don't own or ever played the game.

Torchlight 2 maybe?

None of those are [to the best of my knowledge, having not played FTD] static development games, though- they're all progressive exploration/growth games, meaning people'd be getting left behind. :/

Also, trying to get just a small number of players connected in Torchlight 2 can be a pain, I wouldn't want to try doing that with more than that.. if it can even handle that many :X

Fight the Dragon is intriguing. I actually own it but haven't looked into it deeper. Thank you for the suggestion. I'll have to figure out if it runs with a server or not and how many people can play at a time.

Something I forgot to mention:

There are sometimes 8 or MORE of us playing a game.

So, we're looking at big open world sandbox types I guess... that could support a lot of players.
