This list is a great place to start.
Personally, for the main series entries, I probably would have listed Twisted Metal 2 and the first Parasite Eve, but TM4 and PE2 are very much worth playing too.
If you like the original RE you should dig Dino Crisis. And then Dino Crisis 2 isn't bad but veers off into action over survival horror, but that might be more your style anyway.
And echoing the main sentiment here... get a controller. Its essential.

emulation != piracy, emulating old hardware is not illegal, in fact helps running many old systems all across the internet.
i prefer emulation because it shows the irrelevance of gaming consoles, and makes old games look better.

Emulation doesn't always equal it, but it does when most people are emulating games on their PC.
This guy isn't going to have N64 dumping equipment. He doesn't even own a controller, he isn't going to own the stuff he plays.
because it shows the irrelevance of gaming consoles
BOO! Consoles are awesome.
Now back to my 3DS. :D

But PS1 has horrible textures. Atleast Some plugins make everything so much smoother, not to mention higher resolution.

Thats fine, i have my own reasons to colect Sony and Sega games.
But comparing the two, emulation is in most cases superior to the real thing.
I haven't plugged my Mega Drive in years, has it looks terrible on my TV.
And GBA...only on my PSP
Price is a big issue, thats why i dont collect anything from Nintendo
In any case, i bought them second hand or asked from non gamer friends...its not like they made more money from me than from the ones who pirate :I

better to have a controller. but you can play without him. Only properly configure the emulator (for convenience)

well- at least if you play with a emu- you are able to configure the controler and everytjhing should work just fine- even with a dualshock 3 ;-)

You can actually play N64 pretty well on a standard controller like the PS3 or Xbox one.
Some of the games can be played with the D-Pad which means they should be playable for you.
Only Kirby 64, the Tony Hawk series and Mischief Makers come into my mind, the latter could even be categorized in your action scheme :)
You might be better off playing PS1 games as the first controllers didnt have analog sticks.
I believe you will get used to the controls after some hours if you believe in yourself!

Banjo Kazooie for one of the best platformers ever.
MGS1 on PS1.
Perfect Dark and Goldeneye were all I played for FPS games for a time.

The Final Fantasy and Resident Evil series, naturally, but for one that hasn't been suggested yet: I've always loved Digimon World 3/2003. Of course if you dislike Digimon, you won't like this game either, but if you do like it/are willing to give it a chance, then it's a good, albeit difficult, RPG. Although the 3D battle graphics were a bit wonky even back in the day...I still laugh when I see Kyuubimon because I remember those "flaming French fry" tails. XD

that gen games look rough, i would recomend something very stylized like paper mario. and on ps1 the persona series.
