Definitely The Whisperer in the Dark. our teacher made us read it in middle school and it totally blew my mind. I've only read a few of his other short stories though, haven't tackled the novels yet

One story that doesn't get much mention, but is worth checking out is Imprisoned with the Pharaohs, a story that was "co-written" by Harry Houdini. It was mostly a publicity stunt for Houdini, but it's a very Lovecraftian story. Lovecraft co-wrote many stories, and almost always his method was to inject his style so prominently that the other author's work was almost completely obscured.

Winged Death is another lesser-known story you should read.

the one with the prince underground alone in his castle, then ascending only to discover he was a ghoul of some sort, i forget the name, i read it long ago.

The Outsider - Obscured because someone just getting into this might not want that twist ending spoiled. It's probably my favorite, as well, being the first HPL story I read and being so unlike anything else I had read.

I haven't read everything yet, but until now it's The Colour Out of Space. The story is sad like everything Lovecraftian, though in this case the main character is so desperate watching everything around him dying and he can't even blame a creature for it. Can't do a thing about the matter, only suffer. Usually Lovecraft is about people freaking out by terror, and in the Colour Out of Space this goes further because the character lost it all.

I don't want to point the obvious biggest HPL works, so I'm gonna chose "The hound" short story.
I love the decadence and corruption of main characters, I love the idea of distant howl that haunt them and that intense horror at the end of the story. Oh, that scene with bats and the vulture is so weird and scary!
If you haven't read it, I strongly recommend it!
