Apart from TheYogscast (which is not only Minecraft, check Sips/Hannah) and CaptainSparklez (minecraft), I like SplatterCatGaming , BrenyBeast(lots of minecraft though) , SageMaster15 and Etalyx (more reviews and "let's look at" but he's really good. . Good videos, good commentaries, not enough time to watch :(

I like SideStrafe i joined his community when he did some DayZ vids back in the day, he likes to bring quality content, but he's more focused on having fun, yet, his commentaries are good enough and interesting to hear, check it out if you want

You are contradicting yourself when you ask for Let's Plays to care about immersion, because Let's Plays are essentially people talking over the games. Instead watch a walkthrough and let the game do it's job. You don't watch LPs for immersion, but for the characters of the Let's Players. Giving back stories is giving you more information, but is not drawing you into the game, because it's still some unofficial source talking over it.
Anyway, I don't generally watch them, but since I'm away from a PC for awhile at the moment I've dabbled into some. I can recommend Northernlion who singlehandedly rekindled my interest for the Binding of Isaac. And Jesse Cox always manages to give my day some positivity whenever I watch his stuff.

PewDiePie - in Outlast he saw a dead security guard and he was making jokes at his blood stained pants.
ChristopherOdd - Same game, same scene, but instead of making dumb jokes he was more like "Oh god".
You see what i'm saying? I want someone to talk over, but don't exaggerate.
Between these 2 guys who was the most immersed dude? If in real life you see some white pants all red from blood do you make dumb jokes or you say "oh my god" ?
I don't want to immerse myself, i want the guy who's playing to immerse himself. It's like watching a movie instead of watching some random dude commenting over a game.
Perhaps this is why so far i enjoy only 2 youtubers who make let's plays...

The Let's Play Archive is the place to go for the finest let's plays. Don't let anyone else fool you, Something Awful let's plays are the best ones, and most of them are archived there.

ChipCheezumLPs Mostly Metal Gear series, but a few other games as well. Very competent and entertaining.
Slowbeef I particularly enjoyed the two Dead to Rights games.
I used to follow the Yogscast but I stopped watching their content a long time ago. They are generally not very good at videogames and their videos are too much on the immature side for me.
Something similar applies to Nova: while he's more entertaining than the Yogscast, if you don't want a scream/stupid jokes channel you can safely skip that.
Totalbiscuit's content is generally good quality, if you are looking for a gaming journalist and not a letsplayer (meaning that he doesn't letsplay at all).

You should give davidr64 better known as "X", a try.
Maybe watch his Dishonored series, I imagine you'd like that after watching Gophers stuff.
He is a decent gamer, which is always nice to see, and sadly kinda rare in the Let's Play world, he tries to immerse himself just as much as Gopher, doesn't necessarily go into that much detail with his characters though.
I feel like Gopher has a slightly annoying habit(that i won't go into in case you didn't notice it yet and me telling you ruins something for you.. :D) X has also one habit that might be pretty annoying, but if you can get past that, you will be in for a fun ride.
He uploads when he feels like it, which usually translates to "If he uploads, he uploads daily, if he doesn't, it can take months until something new comes"
Edit: Oh, he also had a Oblivion series that you might want to watch, it's left unfinished, and was a project he livestreamed.
It's not quite the same as the rest of his content, definitely entertaining though.

Actually, I don't mind that about Gopher at all, I'm pretty much the same way when it comes to that kinda stuff...
I can definitely see that the majority of people would rather not see him talk about Mod and tech stuff in general though.
The thing that annoys me is way more subtle, and it's not really a big deal, I just thought I should say "Gopher is not perfect" before i can say "X is not perfect, but you should still watch his stuff" :D

the only ones i watch regularly are pbggameplay and superjeenius. superjeenius's persona lets plays are awesome but he just moved to japan so his uploading is kinda screwy atm. and pbg is pbg

So lately i stopped completely playing games and I'd rather watch a good Let's Play video with that game. When i play a game by myself i usually don't have the patience to read all notes, to do all side quests, to play the game as it's meant to be played.
Sadly it's really hard to find a good youtuber who cares about immersion, so I'm asking for your help :(.
My favorite "let's player" is Gopher. He really knows his stuff, he can make a 1 hour video enjoyable without having to make dumb jokes, scream or anything like that, and he really makes you care about his in-game characters. They have back-stories and you can see how the character evolves. (like in a movie where the protagonist will change when something happens to him)
The only other "let's player" i watch is ChristopherOdd. This dude is almost as good as the first one.
Today i tried to watch a Outlast let's play by PewDiePie. Sadly he has to rely on screams (i always have to play with the volume) or stupid jokes....
TL;DR: Looking for a good youtuber who makes good Let's play videos. Doesn't really matter what games (still, no minecraft please)
