I a pretty big fantasy (and sci-fi) buff. I could give a lot of suggestions, but I need to get some sleep at some point so I'll just list a few that pop in to my head. Excepting my first comment, I'm pretty much going to steer clear of the everybody knows and most likely mentioned already ones:
Hitchhiker's "Triology"
One thing that I will say is that I see a lot of people mentioning Hitchhikers Guide to the Galaxy (which I heartily agree with), but make sure you read the whole of the "triology" (Yes, it's more than 3 books XD ).
Mage Wars
Mercedes Lackey is an amazing author (imo); check out her Mage Wars trilogy (The Black Gryphon is the first book) to see if you like her. If you do, I haven't read more than maybe one book by her I haven't gotten absorbed in (I feel she helps you get in the head of her characters amazingly well), though depending on the "world" and main character(s) her books may be more or less sober- her Valdemar universe books usually tend to be a bit more on the serious side. While I prefer them a bit more "realistic" that way, she certainly writes a large variety, and I like them all. Lackey's 500 Kingdom and Elemental Master books are often interesting twists on old fairy tales (though not all of them), the 500 Kingdom ones being a bit more carefree.
The Obsidian Mountain Trilogy
Also Mercedes Lackey, but co-authored with James Mallory. Some High Fantasy here!
The Strands of Starlight Series
Gael Baudino is the author. It's very heavy and takes place in an alternate universe during the inquisition/crusades. Forewarning that it's... intense and can be pretty sad, but it's another series that sticks with me and definitely worth mentioning.
Circle of Magic quartet
Tamora Pierce. These are classified as young adult, loved the series when I was younger and I bought them a few years ago and have probably reread them 3-4 times.
Acorna
Ann McCaffrey and Margaret Ball/Elizabeth Ann Scarborough. These are Sci-fi, I haven't read the last few (Was reading them as they came out, and just realized there are more! Excite!), but I would assume they keep the pure Sci-Fi feeling. (Wut, I said Ann McCaffrey and didn't mention Dragonriders? Whoops, there I go.)

I started reading The Dresden Files by Jim Butcher some time ago, due to many references and recommendations on the Fate (RPG System) scene. So far it's been an interesting experience... As I have seen no one mentioning this series yet, I'll post a little review.
The first books are a bit rough, you could really feel the author's inexperience and/or immaturity by analyzing the way he set up the plot and described its characters. However, the contemporaneous setting, with a touch of magic and humor, motivated me to continue reading. After all, it does have potential, and maybe could cover up one of the biggest holes in my DM'ing experience :P
Later on the narrative gets more involving; the "black & white" stereotypes seen early on slowly fades and gives place to a more complex plot. You can really see how the author matures and his writing evolves along the series. Overall, if you like to notice this level of meta-detail, or just want a pulp fantasy to read, I can recommend The Dresden Files.

Series, game related: Halo Series, Wheel of Time (long books in this large series) by Robert Jordan. Patricia Briggs for the Mercy Thompson series (very good, loved this series) That should keep you busy for a bit. When you're done with that, I'll get you a list of individual books that will amaze you =) One other series, Halfblood Chronicles.

Anything from Black Library (Warhammer stuff). Be it warhammer 40k or the classic one. Awesome!
Edit: Also, read Three Musketeers. Both books. I didnt read the third but Im even not sure its part of the series. Great books, plenty of action and even fun.

Here in the forums, we get a lot of request for suggestions. Anime, Movies and TV shows are all well covered, but what about books/novels?
While not a classic or even well known, I have recently started, or rather restarted reading the Xanth series by Peirs Anthony. I am currently on the 3rd of the series even though Ive read a far number, about half, of them already.
So Steamgifts, what is a great book or series to read? It can be a classic like Moby Dick, 10,000 leagues under the Sea, Tom Sawyer, or something else such as Metro, Sunshine, Hitchhiker's Guide.
