In all seriousness, I think it was a Portal 2 (glaDOS) joke that spiralled out of hand after fans of the series started posting pictures of potatoes on various sites. Similar to how people make jokes involving cake and lies~
At least, that's my interpretation of it. Not sure how correct it is or if that is its origin.

Apparently I didn't know either when I arrived at SG. It's pretty crazy how often it's used.
It's something that stuck (you can call it an inner joke if you like) with many people after playing Portal 2. It's due to an event from that game. I'll say no more to avoid spoilers. Go play it if you haven't to find out more about it. It's a great game anyway.
