Pre-1900, eh?
Heart of Darkness by Joseph Conrad, English author
Alice in Wonderland by Lewis Carroll, English author
Any of the Sherlock Holmes stories, English author
Count of Monte Cristo or Man with the Iron Mask, though those are by a French author and I'm not sure if that matters or not.

They were too busy reading instead of being on steamgifts.

That's not everyone's cup of tea exactly though so Gulliver's Travels, my favourite book, could work. Wuthering Heights is good too.

War of the Worlds by H.G. Wells. Published in 1898, short, easy to read, and actually very good.
Most of Jules Verne's books (last one was published in 1909, but most were from before 1900. Also rather entertaining
Something by the Brothers Grimm. You would be surprised by how dark these stories often were.
Sherlock Holmes (most were released after 1900, so make sure to pick the right one(s). You probably need to read more than one, due to how short most of these are) by Sir Arthur Conan Doyle.
Though my best advice would be to just find some book that looks interesting. And if you just pick an easy book, in particular at a university level of studies, then there is always the risk of you getting a bad grade. (You need to show that you have a good grasp of the English language, which you really can't if you read a super easy book)

It's a classic, but would be pretty rough for a grade 12 to get through.

Grr... so close, was going to say: The Art of War, but that was 1910
Well... I don't know many that are chapter books... I really liked Kazashi no Himegimi, but I don't think you'd find that anywhere.
If it was a little earlier I'd reccomend The Great Mirror of Male Love
Edit: Derp you said English, can't help you here then

The English translation of the Art of War wasn't done until 1910, but it would still probably work because it was actually written, well, 2,400 years before the English translation.

The Three Musketeers! (1844) Thought it would be boring but its a good read and in easy to understand language. (Try to get a copy that explains some words and place names at the back, these are not too important mostly historical background)

Oscar Wilde's "The Importance of Being Earnest" would be a pretty grand one. It's format is in that of a play, however, so it might not be eligible.

Hello, can you guys/gals recommend me an easy-to-read and understand classic novel from before the 1900's. Reason being that I have to do a ISU on one for a grade 12 university English class. Please don't recommend things that are not in English and bible related. thank you
