Best example is Metal Gear Solid where you shoot sleeping darts, then shoot their walkie talkie or radio so they can't call for backup, or shoot one leg and they limp. And you can drag the body so other guards don't know there fellow guard died

Or similar to Crysis where you throw a piece of wood and the guards will gather by the wood, then you throw a tree at all of them. I don't think you can do that in Crysis 2

I just got Far Cry 3 and in it I can throw rocks to lure the AI to a location. Does that count?

Deus Ex Human Revolution has it to some extent. AI will investigate noise, and go on different alert levels. If they see an unconscious soldier they'll wake him up and go on alert.

Batman AA, has it to a smaller extent but the basics (read bare minimums) are there.

Deus Ex is by far the best choice for this as Nighthawk said. Otherwise... you could try Splinter Cell games or Dishonored.

Perfect Dark had pretty cool AI you could shoot the gun in there hand to disarm them and they would dive to pick up there gun or run away and if you got close enough while they where disarmed you could put the gun to there face and they would hold up there hands and surrender
you could also shoot them in the leg and they would limp and leave a blood trail you could follow as well as a bunch of other things

Perfect dark was awesome! I used to set up matches with the AI on 'meat' difficultly (whatever that meant) and mess with them. Story mode was amazing as well. That last boss was so hard tho. I never did beat it :/

Dishonored? Assassins creed? Mark of the ninja?

edit: Need for speed underground too I think, where you need to wreck this specific cop so he can't call for backup
