here are my apps, few of them are nor important for typical users, but I listed them anyway...

3g watchdog - count internet traffic
aContacts - nice contactlist based on squares with pictures
advanced task killer - taskmanager
airdroid - login to your phone and manage it via browser on pc
andsmb - nice and pretty fast app for downloading/uploading files from/to pc via samba
astro - file manager
barcode scanner - name says all
camera zoom fx - nice photo app
colornote - notes/task lists
dialer one - simple dialer with nice options
droidwall - manage which apps can use 3g/wifi
fancy widgets - nice clock/weather widget
launcherpro plus - best launcher i've seen, fast and goodlooking
opera mini - best browser so far :P
overlook fing - scan network which you are connected to for discover their ips/opened ports
instant heart rate - if you have led flash its nice app for checking heart rate and it really works
picasa tool - connect to your picasa account and see photos stored on it
poweramp - the best mp3/flac/whatever player for android
prey - track your device via web browser if stolen (position based on wifi/gps)
quickpic - nice and light picture viewer
remote desktop - connects you to your pc and allow to manage it like you were in fron of it
soundhound - discovers what song it hears, you can even sing or hum it by yourself
titanium backup - backups apps and/or data and recover them after changing rom etc. it stores all from simple app data up to sms/calendar events/wifi passwords

Meh, I think Doubletwist is the best (free) music player on the market, but ever since I got the Google Music app, I haven't stored any music on my actual phone, so I have no use for a music player.

Well, you should obviously get the SteamGifts app. But beyond the ones already listed, you might want to look into Speaktoit Assistant (currently one of the most popular Android equivalents to iPhone's Siri).

Well, I believe they have that planned. Definitely root your phone ASAP, and if there's a good port available, get CM7 on it - you won't regret it. Yeah, there's flashy stuff with Sense/TouchWiz/etc. out there, but CM7 beats it hands down in performance and features/options.

As for apps - stuff not mentioned yet:

-Adfree (need root - gets rid of ads on some apps/sites)

-Amazon Appstore (random free app every day)

-Key Ring (app for rewards cards like Petsmart and the like)

-Pano (probably the best panoramic camera app)

-Splashtop Remote Deskop (lets you access your computer from your phone)

-Square (neat little app that, with the dongle for it, allows you to take credit card payments to a PayPal account via your phone - people literally swipe their card, you input the amount, and then you email them the receipt, with a description/picture too)

-SystemApp Remove (needs root - simple app to backup and remove certain useless system apps; IMO easier to use than TitaniumBackup)

IMO, don't bother with 3rd-party browsers, especially if you have ICS - the stock browser is usually the fastest and most stable. Opera Mini/Mobile are the only alternatives I'd consider for their bandwith-saving modes, if you're on a plan without much data. Although if you really need to save data, either turn off data altogether if you can, or use a firewall to restrict apps from anything but Wifi.

And definitely don't bother with task killers unless you're running Android 2.1 or older - basically 2.2 onward, unless you have a really low-spec phone or something, Android adequately deals with multitasking by default, and using a task killer can actually be /detrimental/ to performance, since some apps restart right after being killed and use extra resources in the background to do so; opening up the app later will cause it to load slower than just backing out of it or pressing the home button instead too. Basically any phone with 512MB of RAM and up doesn't need an app killer.

And I second LauncherPro - definitely the best homescreen/launcher hands-down in terms of features and performance.

Totally depends what phone you got, sense 3.6 @ ICS 4.0.3 runs BUTTERSMOOTH on my Sensation with 1.7GHz kernel.

Anyway http://forum.xda-developers.com is your best source for these kind of phones.
Read guides about your phone and search a good rom/kernel, best to ask questions there. The smartest people that work with Android are on those forums :)
