Ah I see, so she likes anime and manga, that makes things a lot easier for me to choose from. Toradora and Fruits Basket seem like a mix between Shoujo/Slice of Life which is a fairly common type that women like.
Does she like cute guys? Or hot ones? If so I'd recommend a poster or body pillow, something along those lines.
If you're not bold enough to give her that or if she isn't THAT into it. Then you can always shoot for the Toradora Light Novel but chances are I doubt she could read Japanese either...
Most girls that are into anime typically cosplay when they grow older (and I assume you're over 17 especially since you're moving in with her) so it'd be easy to choose threads/models/sewing kits, but it leaves me with a lot less choices.
Hmmm... there's always the option of cooking her something special for Christmas if you can cook, but I'd probably buy a body pillow of a hit bishy for my friend xD. Sorry I wasn't of much help, if I come up with better ideas I'll post some more.

Yeah body pillows are always nice. I love them myself, they're so fun to have ^o^
and yeah, cooking is a bit overused and cliche. But it's always a nice effort, it's great to go along with a present that you're not too sure about, or if you just want to do it for the heck of it ^_^

A Canon(had the best luck as a photographer with them, epson has ink issues) printer, I highly recommend the Pixma 9000 MkII.
But thats kinda expensive, just an idea.

Yeah this is sad but very true. The worth of gifts is hard to choose for someone. I usually end up getting something that the person already has, or that they give you the face where it's like "eh... not interested, but okay".
Money would be ideal if you were giving a gift to a friend, but this is your girlfriend so I think you should at least have a general idea of what to get her xD

the point of the gift isn't to increase the other person's net worth. It's to show that you think about them, know what they like, and want to make their lives better. Or, as every single person over the age of 30 has put it: it's the thought that counts. If you approach gifts as the gifter or giftee any way other than that, you're doing it wrong.

my girlfriend's an illustrator and graphic designer, i'm getting her some Dr. Seuss books and was planning on getting her this but it takes 4 weeks to get here (2 weeks to US on EMS Express for 36 extra dollars and 2 more weeks to get to my country) so its of the table (at least for now)
so, what should i get her?
EDIT: just so you get an idea of her she loves art, old music like Frank Sinatra and some Dylan, baking and reading.... sadly she's not the biggest gamer of all so cant get her that (though she's gonna play FFIX).
Basically every gift ive ever given her are books, so i want something different.
