Samurai Champloo. It's fairly short, watch it, it's worth it. Also watch Cowboy Bebop.

The Melancholy of Haruhi Suzumiya is a fantastic one.
And, it has a movie that ended up being my favorite anime movie ever.

xxxHolic is a very weird and wonderful anime. For the first episode you'll be like: "WTF IS DIS?!?" but it quickly grows on you until you're watching all of it in one day, and the OVA/Movies; or that's just me...

Don't usually watch Anime, but I liked Elfenlied pretty much. It's kinda short, though.

I'm not a big fan of anime, but I have watched Cowboy Bebop, Soul Eater, Baccano! and Serial Experiments Lain. All these are decent enough, but Baccano! is probably my favorite of those. But from what you said you like, I think you will enjoy Soul Eater more.

Fullmetal Alchemist (just FMA, not Brotherhood. Watch BH AFTER normal FMA if you want), Rurouni Kenshin (Or Samurai X), Ao no Exorcist (A bit silly sometimes but very fun), Elfen Lied (Mature anime. Not only because of the gore.)

Mirai Nikki(psychological thriller/romance/ has an interesting story concept/ funny moments)ongoing

Higurashi no naku koro ni(horror/great story, but disturbing at times with very graphic scenes, you've been warned), finished

Perfect Blue(movie/psychological thriller/major mindfuck), finished

Full Metal Alchemist Brotherhood(a must see, tragic and hearttouching story of the troubles two brothers face to regain something they lost)
Note: Brotherhood is closer to the true story of the manga, in comparison to just Full Metal Alchemist

Persona 4(The Animation) - animation of an old ps2 game/drama/fighting action/ bit of romance. ongoing

Why is noone recommending NGE?

SHIGURUI: DEATH FRENZY is outstanding, and has a really unique animation style, i recommend it to everyone who has even the slightest bit of respect for martial arts culture. it has ended already but you can find it on youtube or torrents

Darker than BLACK. (Pretty good, I didn't care much for the second season though.) (Finished)

Claymore. (More decent fantasy combat, but not the greatest.) (Anime is finished I believe? Not sure on manga.)

Gurren Lagann. (Mediocre overall, but everyone who isn't me that I've met has loved it to death.) (Finished)

Buso Renkin. (If you like Fairy Tail etc. should be a decent fit.) (Finished)

Guilty Crown. (Pretty good, but another 'ongoing' one.) (Ongoing.)

D.Gray-Man. (I love it, but the author died part way through so it doesn't really have a conclusive ending.) (Finished)

Nura "Rise of the Yokai Clan. (Another good fantasy action piece, only detriment is that the 'lead' is like... super young. (In human form.)) (Finished.)

I think that is a good list for meow, and I wouldn't say I disagree with anything else mentioned in this thread.

The one thing I'd stay away from would be Neon Genesis Evangelion. Terrible. Suggested to me by everyone I knew - hated it rather thuroughly. Genuinely has next to 0 redeeming qualities when compared with almost any other anime of similar genres.

FLCL - 6 episodes, finished - it's just nuts... reminds me a lot of my mentality during jr. high
Ghost in the Shell: S.A.C. - 2 seasons, finished - a believable high-tech-world-of-the-future focusing on an elite police/military unit
Death Note - 2 seasons, finished - as brilliant as a game of chess, but played with people's lives (1st season's better than 2nd)
Black Lagoon - 2 seasons + ova, finished(?) - guns. (the ova's just okay...)
Neon Genesis Evangelion - original is finished and ended twice; retelling is in progress - giant robots, but it's really about people and how messed up they all are
Batman Beyond - 3 seasons, finished - because it's still awesome and I don't care that it's not "anime"

Cowboy Bebop and Ghost in the Shell SAC.

Both have an awesome story, great animation, characters that you will remember forever. Also, they avoid clichés. :)

Yuyu Hakusho (finished, both anime and manga) - highly recommended

Full Metal Alchemist (finished, both)

Rurouni Kenshin (but only watch till the first major story arc, after that it's all shite and deviates from the manga which has better story line and continuation. finished, both).
