The game that stands out to me personally is Wind Waker, but since you already have the original...
I heard that many people highly enjoyed playing the HD version again though.
I heard that Pikmin is a cool series, but I don't know much about what the game actually is, just heard about some of the mechanics.

It's not only graphics though.
But still it's mainly for people who played the original a very long time ago or new players, so not for you I guess.

I'd like to recommend you Monster Hunter 3. I've played its' demo on 3DS and it was well detailed, "time-wasting" (in a good way) game. I don't know beyond that though.

Monster Hunter is amasing. if you like grinding games its a definite buy. It is the easiest in the series to get into because they have a pretty extensive tutorial. It teaches you everything while you play without holding your hand to much and withing 3 hours you will start hunting some fairly big beasts. this review here https://www.youtube.com/watch?v=QvNA-ocsiMw will tell you everything you need to know better then i could ever lol. what i can say is that grinding in this game is not like others. you always feel that you are getting better, not because you lvl but because you learn these monsters. you learn there ticks before they strike, where they like to feed, and what they look like when they are really pissed. everytime you fight something you will learn new things. i suggest watching the video because its a game your either going to love or hate what i can tell you is i have sunk 400+ hours into the wii u version then i bought the 3DS version so i could transfer my save back and forth lol

Monster Hunter but only if you have a controller!
It's going to be the longest grindfest of your life but you can see the results so it's worth it(different weapons and armor made from the monsters). (~3000h[might be more] combined from Por3rd, Freedom Unite and Freedom 2)
Oh and I wouldn't call it a casual game like Mario Kart! So prepare to die!

I would recommend Monster Hunter. I have it on 3ds(Its the same on both systems). It can be very addictive, and be difficult at some points. I will say its a very slow to start game, it can take it a hour or so to get the first big monster hunts hunts. When it does grab you though, it can be hard to quit due to the insane amount of content. To complete the single player and online sections of the game can take up 100-120+ hours easy, just to get to the end of the game. Right now I am at the beginning of G-rank(the highest difficulty of quests, you can die in 2-3 hits in G-rank) and have around 100 hours in it on the 3ds. I would say go for it if your interested, WiiU has online co-op, which is where the game really shines. I have to solo everything on 3ds, which is hell itself right now.

So I just got the WiiU and Mario Kart 8 pack, and there's this promotion where you can get a free game. Which one do you recommend me? I'm thinking about getting Monster Hunter 3 but I'm not sure (I've never played a Monster Hunter game before).
I already have the Wind Waker for the GameCube btw.
EDIT: Thank you guys, got Monster Hunter in the end.
