Yes it still counts. It would be impractical for me to request receipts, so as long as the game was featured in a monthly, it will count. How you got the game does not matter.

I just found this with a quick search, but it's plain text and not one game per line, so it may be a bit hard to go through. I'm pretty sure there are sites that track all Humble bundles, but I'm not sure if you can just choose to see the monthly's.

You can go easy mode and play a bunch of 1h games or go crazy and play 6 +30h games. So long as they were in a monthly at a given point, it is all good.

I think it was for BLAEO, maybe the "X is a "play a game you won on Steamgifts" month", but I recommended the games featured in Monthlies because I had to face that I really didn't care about awesome games in those bundles, despite how happy I was for many, many of them :) So obviously, this is a great thing and I like it a lot! :D (But damn, 6 games D: )
I'll give a try to it, or at least try to support it in some way ( I'm in Limbo gaming wise for a good 2-3 weeks, either not in the mood or getting disappointed :c )
I would try some. of these I hope it's okay to restart games with close to no progress, like 1 boss defeated out of 7, or got a single achievement. In case of no, just throwing out ideas. Also I used to idle my games until like 2018, so while they have gameplay time, no / close to no actual gaming was done.

2 Questions: If the game has multiple difficulties, do i have to play it on hardest, or can my usual difficulty of easy/normal count?
also, is this just the main storyline, or does it have to be main+extras?

For lack of free time, I doubt I could make it, but here's a list of games that have been in Humble Monthlies that I've enjoyed(?) and beaten, for... inspiration?...
Grim Fandango Remastered - my favorite game of all time, but I won't think less of you if you need to look up hints on more than one occasion
Dropsy - oh, it's weird alright, but in a positive way. Not recommended for achievement hunters.
South Park: The Stick of Truth - brilliant.
Copoka - short, chill, annoying to find everything
Planet of the Eyes - short, simple puzzle platformer
Kathy Rain - beautiful classic style point-and-click that I enjoyed the beginning and middle of
ABZΓ - short, chill, our cat really loved drifting through the kelp more than the fish!
SUPERHOT - not too lengthy, simple but very effective alternate take on the first person shooter. Makes you feel a bit like John Wick.
Overcooked - highly recommended if you've got a partner to play with. Good length campaign though, not short.
The Sexy Brutale - great little game that ushers you carefully through the slowly revealed narrative through its unique gameplay. Almost short, but didn't feel short.
Tomb Raider - recently re-played this one to 100% (again). I'd forgotten how much combat there was in it, only really remembering the adventuring. It's definitely good, but not top ten good. Still, good. Long-ish, but doesn't drag at all -- keeps you moving.
Life is Strange - beautiful game, loved it. Don't have a good grasp of long/short since I was lucky enough to play it as episodes released, but it's probably one that feels long. I hope no one has spoiled anything in the story for you.
Hidden Folks - it's basically Where's Waldo. Short-ish... take it easy, play one setting per day, savor it a bit.
Sniper Elite - hoo-boy games were clunky way back when... I enjoyed it by the time I got to the end, but the first level almost killed any enthusiasm I had for the game and it was a very slow build from there. If you can't handle old games, do not play this one.

Nice timing, since a new humble monthly (choice) is out in like 4 hours.
To save a bit of money, I think GreedFall is $30 on 2 sites, us.gamesplanet.com and gamersgate (which you all ready mentioned in your post).
I think I'll stop playing my Fallout 4 mega play through (ie. build up all settlements, all quests, all items collected, etc.... far too long of a game) and go for the 6 games beat.

I really like this idea! I will mostly go for short games but maybe I'll add Black Mesa, The Forest, Northgard, Guacamelee 2, Battle Chef Brigade or Mutant Year Zero later... So many great games, I have never touched (except for card farming).

I would love to replay Okami, though a few people, including me, have had an issue with the mouse (the brush in game.) lagging, if that happens to you, it's difficult to finish the game and you may want to consider swapping it out. It's really fun though; and I hope you don't have any issues.

The challenge is simple: Play and beat any 6 games, starting today, that have been featured in any given Humble Monthly/Choice bundle in one month.
The prize: GreedFall
Game length does not matter and I'm not looking for 100% achievement runs. So long as you play and beat 6 games, I'm happy. You can go easy mode and play a bunch of 1h games or go crazy and play 6 +30h games. So long as they were in a monthly at a given point, it is all good.
Just post a comment with either screenshots/ achievements showing that you fulfilled the criteria and I'll add on Steam and give you the link. Feel free to share your thoughts on the games you've played, but it is not required.

Why you doing this?
I hate money. That and I realized I've been subbed to the monthly for nearly five years (yes it has been that long, I checked) and it occurred to me that I've barely touched the games I've gotten from it, let alone played them. Figured the same would be true for a few others, so I figured this is a good way to change that. A sensible person would probably unsub in this situation, but please refer to the beginning as to why that will not happen.
Why six games?
The first few monthlies had 6/7 games in them so I went with that.
How long are you going to do this?
Until my credit card statements gives me nightmares.
This event "ends" on April 3rd when the next HB Choice releases, though the giveaway itself will end the next day. If you manage to finish game number six in between that time, feel free to post, but know that I cannot guarantee that I'll be able to give you the link in time. It may be hard to believe, but I don't live here. I live at my real life job since it seems like I never leave that place :/.
