For multiplayer:
Killing floor 2
Dead by daylight: somehow I keep comeback to this game.
Armello: I only have time to play few match weekly but it still fun.
For singleplayer:
Darkest dungeon: a lot of replay-ability, especially with mods.
Dying light: there so much to do, both in offline and online mode. I mean It been 4 years since it came out and dying light 2 is near, and this game still get update and event regularly.
Yakuza games: Another case of there too many thing to do in game.
Stellaris: This game have lot of replay-ability but you will need the dlc.

For me, I've always had staples of CS:GO, TF2, and CS:S, with my combined hour count in these being over 4000.
However, recently I found that whenever i'm going back to my "staple" rotation, I also play Mordhau(a sword fighting game), Deep Rock Galactic(Exploration/Co-op and FPS), and Star Wars Battlefront 2.
What are some of your lesser known staples that you find yourself always coming back to?
