American Truck Sim (or Euro Truck Sim 2) can be very relaxing. You get on the road, turn on your tunes and just drive. The scenery is very nice (and realistic). In fact, I cannot play this when i am very tired, or the game helps me drift off to sleep, which isn't so great for my in-game career. š

This is a hard question. I enjoy both.
I have owned ETS2 a few years longer, than ATS, and for a while it was my main game.
I have several hundred thousand miles driven in ETS 2, and only a few thousand miles in ATS.
My copy of ETS2 is sadly out of date, and was installed on a computer which could barely run it on low graphics, while ATS (steam) is on a computer with a dedicated GPU and has the graphics set to high. This being said, as an American, based on what I have seen of the two games, ATS looks more realistic, but, as I also said, ETS2 is a few years out of date.
If I had to pick one now, I'd say that for content (maps, expansions, other DLC, mods, etc), pick ETS2 (especially as it has been out longer, and SCSSoftware's content on steam goes on steeper sales after having been out for X months), but for "feeling like you're driving in the Western US", pick ATS. Of course, if you want to feel like you are driving around in Europe, and if you want to see European scenery, choose ETS2.
ETS2 has snub-nosed (cabover) trucks, which are nice in some ways when compared to the traditional longer-nose trucks which I see here.

I don't know that ETS2's graphics aren't real, merely that with my horrible graphics card, I couldn't get it to look great as of 3 years ago. On twitch, both look fantastic, but ATS has some dingy buildings which, sadly, look a tad bit more real to me.
I strongly recommend watching a bit of https://www.twitch.tv/Squirrel's Sunday Night Trucking vods, as those will give you a feel for the game on Ultra graphics. He has recently played both games.

To add to what Microfish said, both are great, both look equally good (although some things that ETS relies on mods for is built into ATS). People without a strong preference for one locale or truck style over another tend to like the game that's furthest from where they live because it feels more different and exotic.
ETS has wide vistas and beautiful scenery that really makes you feel like you're driving through the European countryside, but it feels like you're on the periphery of towns and cities - while you may pass through a town or city, it's very brief, and you always feel like you're delivering to a warehouse on the outside of the city. I prefer ETS for the scenery, and the relatively flat topography makes it easier to start out in (especially if you're driving manual transmission). Here's a few screenshots:

ATS has much better and more detailed towns and cities that make it feel like you're really there. When you make a delivery to Walmart, you don't just drive to a warehouse on the outskirts of town, you drive into the town, up to the Walmart store, and around to the back of the store to where the loading docks are. The scenery unfortunately isn't as interesting, largely because California just isn't as lush and green and varied as Europe, but when you make a delivery to San Francisco, it feels like you're really driving in San Francisco. The first time I drove across the bridge into San Francisco, my jaw dropped. There are some other improvements, such as the roads having more interesting events - like an accident closing an off-ramp and requiring you to figure out an alternate route - and deliveries being more realistic - like delivering a digger to the site of a road repair. The hilly terrain of California makes it more difficult to start out in, particularly if you're driving manual transmission (you frequently end up having to start from a full stop going up a hill). I started playing ATS, and have just hit level 4.
I'm just using auto trans, cos I only want Sim-Lite, but my biggest gripe is the view - obviously cab view is what it's designed for, but with a single screen it feels extremely claustrophobic. Third person view loses the sim feel, but it makes it easier to see your surroundings, and I use it for parking, cos seriously it aint happening while I'm in cab view! XD
I'm using an X360 controller, and the only gripe I have with the controls are that the gear change buttons are by default set to the indicators as well (unless this was something I did myself by accident), so I'm going to have to change that.
So far, not too bad a game though, I've just been taking odd-jobs; longest haul so far has been the LA-SF one, but a lot of it was at night. I'm going to try and see if I can setup a dual, maybe 3-monitor setup to see if that helps my experience somewhat; just not sure I have all the correct adapters for my old monitors to connect...

Well, the mods I like for ATS do things such as replacing the fake game logos with real logos - which the developer couldn't do, but make the game feel much more realistic. There's the ATS Real Logos Project, Real Company Logo 3D, Real companies for Ford Transit vans, SiSL's Trailer Pack USA and Trailer Pack Addon: SCS Treplacement.
Sound Fixes Pack improves the sounds in the game, and if you'd like more vehicles and realistic vehicles in your game, Jazzycat has a bunch of traffic packs (these would need to be manually copied to %Documents%\American Truck Simulator\mod).
The cab view on a single screen is unfortunately claustrophobic, particularly if you set the FoV to what would be correct or closer to correct for a realistic view and sense of speed. With the FoV set correctly, I end up cutting off most of the dash, so I'm using an app called ETS2 Telemetry and an old Android phone for a dashboard.
And don't feel bad about using 3rd person camera for parking, I still do that sometimes. :)
ATS has this one-more-delivery aspect to it that really hooks me in. I'll drive to a destination to make a delivery, then naturally look for what's available there for my next delivery, and so on. And adding the upgrade mechanics on top of that - for yourself, your truck, your drivers - it all ends up hooking me in and before I know it hours have gone by. :)

Seasons after Fall looks astonishing and reminds me of Ori and the Blind Forest, which I haven't played yet (do not own it). Lifeless Planet is another one on my list (over 100 entries here, and still do not own it).

It's not really relaxing, but it is gorgeous, and probably my favorite Metroidvania game. The way the game expands your movement skillset, and in so doing completely changing the way you look every location, is nothing short of brilliant.

Bit puzzle logic, shove cube around, get through the levels. Felt nice to me, not to pushy, no rush rush. Just brain a little and move the cube ^_^

Turns out a publisher named "Hamster on Coke" actually puts out relaxing puzzle games, like Zenge. They're all in a "Relaxing Puzzle Box" bundle with a couple others. I found klocki and Scalak especially enjoyable.

I liked Peregrin a lot. It has a good story and the sort of color scheme that just looks and feels relaxing. The puzzles aren't too hard either. Maybe you can try that out? :) You can get it for free on GMG if you buy a Bronze Tier game right now

I found One Way Heroic to be the most relaxing game for me, because of it's soundtrack. I put the game's main menu theme, windsphere on loop all the time when I'm stressed out. And here's my review if you're interested :)

I havenāt had a chance to play most of these yet, so I will be basing them off videos Iāve watched and what other people have said about them.
GNOG - A unique, colorful and interactive 3D puzzle game. The music in this just screams āchillā in this, try watching a few minutes of a No Commentary video of it to see how it is. Possible downsides:: Short and may not have much replayability afterwards, but seems it can be easy to 100% though to the cheevo-hunters out there! I think you might like this one.
Donut County - Another one you might like. Has some story, dialogue that might make someone smile/laugh and a weird but entertaining concept. Another game with the 3D polygon style and a colorful world. This seems like a just feel good-type of game. Some possible downsides: no voice acting and is short.

Night in the Woods - Definitely focuses on story and the characters in it. Really cute art style imho. Thereās some gameplay moments if I remember correctly, but majority of it is walking/exploring the town and talking to NPCs. Possible downsides: no voice acting and lots of backtracking. I feel like this is a game that someone will get the most enjoyment out of if its not rushed. Lots of people give a lot love to this one, but of course thatās not the case for everyone.
ISLANDERS - I actually bought this during a sale, but ended up refunding ācause of the technical issues it had but you might not encounter problems. Got it 'cause I needed a āstress-relieverā game, something that didnāt ask too much out of me, and yeah I almost couldnāt stop playing this. You place and design what goes on your city/island and get points for how well theyāre place. Thereās also sandbox mode where you can kind of create freely, but no points are earned. This video review was one of the insightful ones I watched.

Refunct is really small game that I wishlisted long time ago but haven't expected anything from it and I see it is 3rd or 4th (or maybe 5th) recommendation of it, so right now it has my attention and curiosity :)
