Stronghold - in building mode - just build your castle. No enemies. Quite relaxing for couple of hours.
Sims 2 - just do what you want in whatever pace you want.
You can connect both and play sims medieval xD Also this has great and relaxing soundtrack imo.

Another vote for AER - Memories of Old. Nice visuals, no fighting and the flying mechanics are very well done. Overall a very relaxing gaming experience.

As someone mentioned above, Submerged is an excellent game that is quite relaxing. You can almost feel the ocean breeze blowing in your face. Plus the soundtrack for it is very nice! The soundtrack is on sale (90% off) right now if you don't already own it.
This is one of my favourite games ever. I wish I could erase my memories of playing it just so I could play it again anew!

Oh I love nice-looking puzzle games! So here are some of them that I have played and that I can recommend. And yeah, they all are relaxing and atmospheric.

I really enjoyed Hook and Zenge. Glass Masquerade (1 one I played) I really enjoyed <3 Hidden folks I almost finished, still have it installed to come back :D for other games: I will try it :) and I just wondered if Lara Croft GO (as well as Hitman GO and Deus Ex GO (unfortunately not on Steam)) is really good :)

Yonder looks like game for me :O amazing, beautiful and colorful world! Reminded me of My Time At Portia (game I have to buy on next sale) and looks a bit like Legend of Zelda Breath of the Wild - unfortunately I do not own Switch so I haven't played it.

mirror edge 90% of it is just platforming in a beautiful urban settings and its not hard or frustrating to finish , also Submerged 100% of it is platforming, there is no fighting
