I have 4 I want to share. =)
The Devil's Advocate:
Kevin Lomax: What about love?
John Milton: Overrated. Biochemically no different than eating large quantities of chocolate.
Halloween:
Loomis: I met him, fifteen years ago. I was told there was nothing left; no reason, no conscience, no understanding; and even the most rudimentary sense of life or death, of good or evil, right or wrong. I met this six-year-old child with this blank, pale, emotionless face, and the blackest eyes... the devil's eyes. I spent eight years trying to reach him, and then another seven trying to keep him locked up because I realized that what was living behind that boy's eyes was purely and simply... evil.
Do what you can, with what you have, where you are. - Theodore Roosevelt
I once sent a dozen of my friends a telegram saying 'flee at once - all is discovered.' They all left town immediately. - Mark Twain (Love Mark Twain)
EDITED: To add this one for Death
I did not attend his funeral, but I sent a nice letter saying I approved of it. - Mark Twain

"Man's unfailing capacity to believe what he prefers to be true rather than what the evidence shows to be likely and possible has always astounded me. We long for a caring Universe which will save us from our childish mistakes, and in the face of mountains of evidence to the contrary we will pin all our hopes on the slimmest of doubts. God has not been proven not to exist, therefore he must exist."

"As the Americans learned so painfully in Earth's final century, free flow of information is the only safeguard against tyranny. The once-chained people whose leaders at last lose their grip on information flow will soon burst with freedom and vitality, but the free nation gradually constricting its grip on public discourse has begun its rapid slide into despotism. Beware of he who would deny you access to information, for in his heart he dreams himself your master."

"Why do you insist that the human genetic code is 'sacred' or 'taboo'? It is a chemical process and nothing more. For that matter -we- are chemical processes and nothing more. "And when at last it is time for the transition from megacorporation to planetary government, from entrepreneur to emperor, it is then that the true genius of our strategy shall become apparent, for energy is the lifeblood of this society and when the chips are down he who controls the energy supply controls Planet. Science
This is a pair of quotes which is probably the greatest scientific and
philosophical debate between the most intelligent people in 20th century - Albert Einstein and Niels Bohr.
The debate is centered around the natural of our universe ( quantum mechanics )
"God doesn't play dice with the world" - Albert Einstein
Niels Bohr replied, "Stop telling God what to do."
And the debate still goes on today, however, Albert Einstein was wrong in certain degree.
the universe can't be certain and local at the same time (by Bell's inequality experiments )
I also love many quotes from mathematics, such as,
"God made the integers, all else is the work of man." - Kronecker ( which is also on my steam profile XD)
however, since you are asking only science,
so I only discuss science here ><

Works for arrival and/or anything else that needs an introduction:
"What, are you dense? Are you retarded or something? Who the hell do you think I am?" - the Goddamn Batman
"SHOWTIME" - Gomez Addams
On death and celebrating life:
"Well. I think some of it is probably contrasts. Light and shadow. If you never had the bad times, how would you know you had the good times?
But some of it is just: If you're going to be human, then there are a whole load of things that come with it. Eyes, a heart, days and life.
It's the moments that illuminate it, though. The times you don't see when you're having them ... They make the rest of it matter." - Death of the Endless

"A great ideal always provides the strength to dominate our body, to suffer fatigue, hunger, cold. What matters the white nights, the oppressive work, the anxieties and poverty! What is essential is to have in the bottom of our heart a great force that reanimates and pushes forward, which strengthens the nerves, which is throbbing with strong beats tired blood, which infuses into the eyes the blazing fire and conqueror. Then nothing gives pain, the same pain becomes joy because it is a means more to elevate our gift, to purify our sacrifice"

Nobody will take me seriously but anything from the pychos and krieg in borderlands. Those guys even recite Macbeth while trying to kill you.
Anyway, I've always been hooked by Blood Meridian specially by the Judge and his dark and dangerous way of see things. And of course, as he says:
Men of God and men of war have strange affinities
