There are so many amazing intros so it's extremely difficult to choose one as my favourite... BUT! If I had to pick one I'd go with Tartarughe Ninja alla riscossa. I still sing it from time to time!
We have been very lucky: most of 90's cartoons were just awesome. Bonus question: Do you remember Solletico and it's opening?

Hmm... I don't quite remember any cartoons, but I'm able to recall some anime, even though I don't watch them anymore, 'cause nothing really appeals to me.

Basilisk only started to like it when I started to listen to Onmyouza and the way vocalist sings stopped being annoying for me :)

Sayonara Zetsubou Sensei - curiously I've never watched this series, but "bureburebure" stuck into my head for some time.
Death Note op 2 never fails to crack me up... I'm sucker for japanese lyrics that have little sense and engrish xD
Beelzebub - one of few comedic anime series I've enjoyed (sadly only till some point then it became annoying), mainly because amazing translation in my native language which was actually funnier than original :D

Used to listen to whatever songs I could find sung by Giorgio Vanni and Cristina D'Avena(on YT and Grooveshark) when I read that they sung a lot of anime songs in Italian

There are rights management and such behind that complicate things. For example, listen to the themes of spanish Captain Tsubasa and italian Lupin III.
I never knew O_O Oliver y Benji (Tsubasa) was one of the first animes I ever watched, on the Spanish TV channel T5, which I assume belongs to the Italian Mediaset. Lupin the Third was also on this channel, although our version was quite meh.
And incidentally I found out there is a new Lupin anime with an awesome opening

Aww, c'mon, if you're going to link the Fist of the North Star intro, go for the original cheese Hokuto no Ken.
Claymore (outtro) is pretty damn intense, shame the anime ends abruptly due to a lack of popularity (the manga continues way onwards).
I just found Claymore (outtro) fandub while digging this up too. It's pretty good. :3c

I have many, most of them (obviously) from my childhood, and I've decided to share the best with you all. Tried to do a "Top 10" but ended up with a few more.
(Writing this post took much longer than expected as I listened to all of these, and many more) =P

Why am I doing this?
Maybe you think that all of the themes are equals around the globe.. Well, I also used to think so.
BUT it doesn't work this way
There are rights management and such behind that complicate things. For example, listen to the themes of spanish Captain Tsubasa and italian Lupin III.
And so it happens that a country have a different theme and its populations may take for granted it's based on the original when maybe it's not (as here in Italy).
Perhaps you now "investigate" and discover that a theme you thought to be global is only known in your country and want to share it here with us.. Please, do it.
Also, I find older themes to be better.. The new ones are basically dance-like tunes made to appeal teenagers (and set childrens' mind in that "mentality"). I'm not saying all of them are bad.. I can't help but sing along everytime I hear italian Dragonball and Dragonball Z but I still prefer the old themes as I see them as real songs.
Except for original anime intros/outros, which I find very variegated. (There are minor channels who do buy anime rights and keep the original music, so I know some..) like Slam Dunk's, Sayiuki's and many from InuYasha, to name a few :)
I also like some songs from Disney movies but that's another story.. =P
