So, on giveaways, there is a "hide giveaways" button. What does this do?

My guess is it hides giveaways of that game. Am I correct? If not, is there a way to do that?

Yes, depending on your giveaway settings. You must have "Hide games you manually filtered?" set to "Yes". You can remove games from that list ("unhide" them) here.

Also note that the giveaway may be to a sub (also called "package"; a /sub/ page on the Steam store, as opposed to an /app/ page). Then that will hide the sub but not the apps. Likewise, hiding an app does not hide the subs that have it. That must be done manually, so sometimes you may need to hide a game several times over to achieve the desired effect.

Also, makes sense (I was actually going to ask if it hid packages if it also included a game hid, and thought I posted that reply. Turns out I didin't, and you edited it, answering my question!

Though, it doesn't seem to hide them in a users list of giveaways (If I go to your page, I can go to "user", and see all giveaways). I still see games I hid... how can I fix that?

You can't hide them there. When looking at a user's giveaways you always see all their giveaways. No exceptions. (Well, ok, it doesn't show any deleted giveaways. But it shows all the ones which are still ongoing or concluded properly.)
