No idea about SimFarm but I just like management games in general . Atm i'm having a blast with Tropico 4 :p

I don't tend to go for such management games. The closest equivalent would probably be when I played Starcraft or Warcraft 2, where I would rather build a nice base full of defences and upgrade everything to maximum than actually attack the enemy. So I suppose my answer is the completionist aspect.

Didn´t play SimFarm a lot, but I like such games in general.. Will Wright once stated that he designed SimCity as a gardening-simulator.. its just very satisfying to sow some seeds (in SimCity = zones) and tend your garden (= City) by watering and fertelizing it (= Water, Electricity, Parks etc) and protect it from vermin (= pollution, crime and sickness etc) and just watch it grow into something nice.. another thing about these games is the satisfaction of reaching goals you set for yourself.. you are constantly working towards a goal by setting some smaller goals and when you reach the big one, it just leads you to more objectives or new problems you have to solve. The game Anno 2070 (and its predecessors) is a perfect example for this, the whole gamedesign is based around that big-goal/smaller-goals/new-problems mechanism.

Great answer, thanks a lot for the insight. I'm working on a game about managing a bamboo farm. It's supposed to be edutainment but rely on tangential learning rather than lecturing, so its main and first goal is to be somewhat fun.

Sim games allow me to control and manage things in the virtual world using different resources and scenarios, I view it as a therapy to my control efforts because in real life you control only a small sum of all things.

I don't really like social games, like facebook ones. If you meant strategy games, like sims or cities in motion, for me it's kinda funny dividing resources and using them wisely.

How about some action as mini-games in a Sim game? For instance: when you're about to harvest your crops, you need to do well in a harvesting mini-game to get good quality crops.

SimFarm is an old game (20 years old) and it's clearly broken (if you focus on planting oranges you're set) but it is a classic. If you'd like to give it a try though, you can download it on Abandonia and play with DOSBox.
