My favourite food is fondue bourguignonne, that is dipping pieces of meat into a pot of hot oil to cook them and then eat them with some supplementary dips and vegetables. It always puts me in a festive spirit as we use to eat this on christmas eve and on birthdays.

My mum's beef stew recipe. The beef is pressure cooked after marinating and when it's done, it's just so incredibly soft and tender, it's fantastic. The beef just falls apart at the slightest touch, but it's packed with flavour. Stew has normal stew things in it, carrots and such, and served with creamy, seasoned and smooth mashed potatoes. Just everything comes together into a fantastic dish.

One of my top favorite foods is chicken parmagiana, preferably with a side of angel hair. I've always loved mozzarella and provolone and tomato sauce, to the point that they're nearly staple ingredients. But this isn't something you go to the trouble of making all that often. This is when you spring for the good stuff, to really knock it out of the park. You've got the already-amazing fried chicken's crunch, combined with all of these awesome savory and tangy and sweet and herby flavors. It's just so, so satisfying to me, and is sort of a nostalgic meal. I often request it for my birthday each year. On top of all that, it can be really really hard to find a restaurant that does it well. So you really have to have it homemade, to really savor the dish.
