Of course, there are also giants like Manos Hatzidakis (Μάνος Χατζιδάκις), as you said (example), Mikis Theodorakis (Μίκης Θεοδωράκης) (example), Stavros Xarchakos (Σταύρος Ξαρχάκος) (example) or from the opening ceremony of the 2004 Olympic games for a purely Greek sound.
Let me add something less Greek but from Greeks, where Vangelis with Demis Roussos and two others, had made a band many years ago called Aphrodite's Child (example).

yeah my teachers band is frequently playing at these medieval festivals in southern germany.
was really fun when we found out about his band in 9th grade or so and the lyrics were about all kinds of drunken escapades :D
