Has to be Castle Highclere from Downton Abbey. My gf and I were able to visit a few years ago and it was great.
I was amazed by Neuschwanstein , the castle you see in Gabriel Knight 2. I hope I will be able to visit it one day!
My favorite king would be King Arthur :)
I was there some years ago during winter: lovely atmosphere! (the long walk to reach it was quite tough tho.. xD)

I can't really think of many castles that stood out to me in media, so... maybe the Ivory Tower from Neverending Story, if that counts? Favorite fictional king is Aragorn.

Not a specific king, but as far as castles go, Lordran from Dark Souls comes to mind. Impressive, yet depressive
