i was under the impression that when they gather the info from you they send it to themselves over the internet in plain text just begging the NSA to slurp it up and keep on file.
also mobile apps ask for wayyyy to much info for what they do

Check the apps permissions... why on earth an android game need:
YOUR LOCATION
Aprox Location
Complete access to net
Receive data from internet
View wifi connections
View net connections
List of phone calls
Read Identity and phone status
Storage (this is the only one I think is usefull)
Modify or delete usb storage data.
YOUR ACCOUNTS
Search for accounts in your device
System tools
Test protected storage access (wtf is this???)
Battery
Block device suspension
For comparisson: Minecraft PE Permissions
Net access.
Storage access.

Most of these permissions are needed to the app to keep the device and all the services running in the background.
Yes, someone could use these to control your phone but for example most games just need the net and calls access to prevent their game from crashing/closing if you get a notification or a call. Most developers use the call access to freeze the game and let you speak to the caller, otherwise the game would stay on the top of the call screen.

The first hint that something is wrong with angry birds is that upon installation the game, it asks you for access to your camera and mic.
Same with many apps including facebook app which states in the eula that they can audio record, video record and take picture any time they want without confirmation. By installing the app you agree to this, a lot of phones have it as a standard (bloatware) and you are unable to delete it unless you root your device.
Smart phones are a perfect device for spying on people.
Nothing is going to change, the majority are far too apathetic.
