Ratchet and Clank.
I played the trilogy and Ratchet Gladiator/Deadlocked countless times on PS2, and now that I found the HD trilogy on PS3, the Ratchet marathon starts anew. I enjoyed very much Tools of Destruction and A Crack in Time on PS3, and Size Matters and Secret Agent Clank on PSP. Haven't played the others yet.
Pretty fun, totally cute, a decent gameplay. I loved it all.
On PS1, I played MediEvil and Tomba (Tombi in Europe) at the very least 5 times and I totally could play them again. The soundtrack, the atmosphere and Sir Daniel Fortesque for the first, the WTF for the second.
On PC, I'll go with Fable. Probably the only PC game I played again and again and again.

Front Mission 3.
The story is total wank that I try so hard to ignore because the sheer depth of meaningful Mecha customisation available is everything I want from a game.
Some games have a huge range of options when building or designing your character, but all too often, they don't change anything. With Front Mission 3, each part ( arm, leg, torso, etc ) changes the chance to activate a special skill, and each weapon ( shotgun, MG, missile, rifle, FIST! ) leads to such a different playstyle.
Ideally, a FM3 remake, with non of the story is what I want.

VA-11 Hall-A: Cyberpunk Bartender Action is one of my favorite games. I'm playing it for the third time and the atmosphere and story continue to drag me in as though it's my first time playing it. The mixology is simple and easy to remember, providing an interactive aspect to the story that keeps it from dragging too much.
