Sim City 4 or Civilization 4. Both good, Sim City in the open-ended have fun doing whatever way, and Civ in the rule the world kind of way.

I've lost many hours to Civilization games. I played the first, one of the Call 2 Power games, then Civ 3-5. Civ 3 is my favorite, followed by Civ 5 with the BNW expansion.
Prison Architect is also a fun and addicting game. I got it when it was in early access. I decided to start it up one night thinking I'd play to burn a few hours until I needed to go to bed. The next thing I know, the sun is up, I'm starving and 12 hours have passed. I haven't played it since the final release though, I've been meaning to come back to it.
Sim City games are good too, except the last/current one. I've played the first one, 2000 and 4. I just bought Cities Skylines from the Humble Store during their end of summer sale. I haven't played it yet, but I'm sure I'll get sucked into it too.

Logic, I'd go with LYNE. I was thoroughly impressed by it and I'm seriously going to replay it at some point.
Strategy, maybe Warcraft or Civilization IV. I like most strategy games but those are something I always go back to and feel like I can play them in whatever mood I am. CIV IV is a funny beast since while playing I'm often annoyed by random things but other times I'm so addicted and can't wait to start a new game. :D
In real-time resource management strategy yes my fave genre, y do u ask? I LOVE The Settlers: Heritage of Kings above all else. If I got to keep one game for the rest of my life, this would probably be it despite the generally poor reception.
The Settlers is another series I'm big on. Age of Empires series is good casual one too. I could probably write a looooong list!
I'm more interested in RTS but I guess I'm in the hunt for a good turn-based one as well. I'm really interested in 4X.
Management is absolutely my favourite genre. Zoo Tycoon is a-m-a-z-i-n-g. Caesar 3 is the absolute gem of the city management games. I love it so much I can't buy it on Steam or I'd never leave my house. No joke, I played CeasarIA in all of its buggy glory for 70 hours in a week.
Casual time management recommendation goes to 12 Labours of Hercules. There's just something about it. Yet to play Dracula but looks like a great game as well.

Recent favourites include XCOM and Dungeon of the Endless. Older favourites include Civ series (played a lot of it over the years and sad to say I am a little bored of it now) and Total War series although I haven't played any since Medieval II.

I kinda got bored with Civ when Total War came out. Kinda got bored with Total War when I discovered Europa Universalis. That got bested by Crusader Kings. Now stuck in X-Com.
I stopped playing Crusader Kings II when I figured out a simple way to conquer the world and it ruined the game for me

I tried it twice while in early access. The first time it wasn't ready yet. The second time was a few weeks before the final release, and it was fun. It's quite similar to MOO2, but with more polish. At the time, it wasn't quite as good as MOO2, but still fun to play. it does suffer from the problem that you end up with recreating the same build ques on every planet, and hopefully they've improved the enemy AI.

For logic: The Talos Principle. I'm also a big fan of the Myst series (not including Uru, which I disliked)
Strategy: Europa Universalis IV, Crusader Kings II, Victoria II, Hearts of Iron II, Dawn of War, Majesty: The Fantasy Kingdom Sim, Rise of Nations, Master of Orion 2, Emperor of the fading suns, Panzer Corps, Jagged Alliance 2... the list can be made longer, there are just so many good ones out there.
Management: Well, it depends on what you count as management, but Theme Hospital, Theme Park, Cities Skylines. If you mean business sims like Capitalism.. well, I've only played Capitalism, and it was not for me. And I've never played a sports-management game.
