Good question.
One with 2-3 side buttons. more and it increases the risk of me hitting the wrong button, in particular with how I grip a mouse.
A medium-sized one. I've got long fingers, so I do a bit of a claw grip, but not quite, and neither a very large, nor small mouse works for this
Good comfy scroll wheel that's easy to press, and which does not roll "freely" (I prefer it when I can feel the individual "steps" when scrolling)
No LEDs. I find it distracting to have a light source where my mouse is.
No sharp edges
No ugly "gamer" motifs on my mouse, please.
A good sensor (yes, there's a noticeable difference between a 5€ office mouse and a 20€ mouse, and I did notice a slight improvement in my aim when playing games when I stopped going for the low-end mice).
Sadly such a mouse is hard to find :(

Logitech G502 Proteus Spectrum. I'm not normally one for colored lights on PC stuff, but having one color for low-DPI FPS mode and a different color for high-DPI everything else mode is really useful, so you can tell at a glance what mode your mouse is in. Other than that, the mouse is really comfortable for palm grip (and pretty good for claw too), has lots of buttons without too many buttons, and just really works well.

Logitech MX518, but it isn't in production anymore.
I'm still using the G400s I bought years ago. I despair the day it will die, because none of the current mice (Logitech, Roccat, Razor, Sharkoon nor SteelSeries) appeal to me. I tried various models from those manufactures, but they either have too many buttons, try to put on a lightshow or don't work well with my grip and small hands. Plus a lot of them are costlier than I will ever invest in a mouse, for me 50€ is the absolute most I would pay... better would be ~ 40€.

I would probably get the latest version of the Razer death adder or something similar.

I'm currently using a Logitech G502 Proteus Spectrum (or, at least I use it more than my other mouses). Pretty good all-around with plenty of customization, and feels decent if you have big hands.
Kinda checking out the Mionix Castor and Naos at the moment, too.

I use a thermaltake talon blue. First one I got of it was a factory dud and I got another one and it's worked for 2 years+. Nice braided cord, good layout and feel. You don't need a $200 mouse to have a good experience, $50 is plenty.

I'm not sure if they still make them or if it's mentioned before but I swear by my Logitech g700s
For me my mouse is very personal and it took me ages to find the right one.
If anything ever happens to this one and I can't find the same one there is a small chance I might go mental for a while.
I'm so used to it, it fits so well in my hand, perfect buttons etc.
But yes, picking the right mouse is hard, very very hard.
Think the best advice I can put is to visit a store where you can actually hold it in your hand and move it around to see how it feels.

Had the Naga Hex --> Nice mouse, but a bit too few buttons [😉]
Last Black Friday two remaining competitors were in the race: The Razer Naga (12 side-buttons) vs Corsair Scimitar Pro (12 side-buttons)
I made the choice for the Scimitar - and I love this mouse. That extra buttons have mechanical switches and feel very high-grade like.
Recommended if in need of buttons :)

Currently using E-Blue Cobra, really fit my hand, only complain is the curved shape of the mouse button made it hard for spamming 2 fingers left button clicking.

I'd like to try Mamba cause people are saying it is pretty good, but I am happy with Logitech G502.
