Even though it's already been mentioned a few times, I definitely recommend the Silent Hill 2 soundtrack.

Some other wonderful soundtracks:

Chaos Legion - Awesome game. Sometimes I would just sit and let the main menu music play for awhile before I would play the game.
Cinders - I love the main theme.
Parasite Eve - Primal Eyes, the main theme and Kyrie are my favorite tracks. The orchestral version of the main theme is quite nice too.
Shadow Madness - Mountain Pass and Barleygrove are so good.
