Not very useful. 650w for 2 cards, 850w is 3 cards but you don't go 3 cards on 1155 anyways. So in this case, 750w is pretty much extra cost that doesnt't help much.
Of course not skimping out on PSU is important but honestly, a good OEM is much more important.

I'd recommend just jumping to a 600w to 650 watt, shouldn't be much more cost wise but leaves power for fans and other case items if you want/need

I wouldn't go with the Vengeance high profile but instead go with Ripjaw, Mushkins, or Samsung. Also that mobo is decent but there are better alternatives. That PSU however isn't really very good in terms of quality. For example, the XFX 550w is much better even though its the same wattage since it has a better OEM.

Yeah, I would definitely go a little higher wattage on the PSU, upgrades/overlocking/additions must be considered. I agree that the reliability of the PSU is also very important, wouldn't want it to die or see your stuff get fried.
Motherboard seems fine, I went with the ASRock Z77 Extreme4 myself, do note that the motherboard you've chosen only has a single PCI Express 3.0 slot though.
I do not see anything wrong with Corsair Vengeance RAM personally though, care to elaborate tr4656?

While the Asrock Extreme4 was highly respected by the community in the past, the board has been shown to have bad mosfets, which make it not as attractive as before. Thus, boards with better mosfets such as Biostar TZ77XE3/XE4, MSI GD55/GD65, or Gigabyte Z77X-UD3H are better boards to get.
With the Vengeance, the high profile ones will often conflict with a heatsink (non Intel one). Even if you do go for LP ones, the Ripjaws, Mushkins Blackline, and Samsung OC better. For example, the Samsung OCs to 2133 on air, which is not that big performance wise, but shows that it is more stable.
